Extra tomatoes? Make Caprese salad

If you’re looking for another way to eat lots of those tomatoes you’re growing, I recommend Caprese salad. My husband made a beautiful one last week, and it was as delicious as it was simple.
The main ingredients – actually almost the only ingredients – are tomatoes, mozzarella and basil. The key is being sure those ingredients are really at their peak of deliciousness, which means it’s a perfect summer salad because no winter tomato ever deserved this kind of starring role.
You also need quality, moist mozzarella, and most groceries carry a good assortment. And if you don’t grow your own basil, you probably have a friend who is overrun with it right now.
Alternate layers of tomato, mozzella (both sliced about ¼ inch thick) and basil leaves. Then drizzle with olive oil. Or take a less traditional route and drizzle with vinaigrette.
